Macque Choux(Cajun Smothered Corn) is an moderately easy dinner. Cut off tips of corn kernels into a bowl.
Scrape milk and remaining pulp from cob with a knife.
Set aside.
Combine oil and butter in a large skillet over medium heat until butter melts. Add corn, tomatoes and remaining ingredients and cook, stirring constantly, 5 minutes.
Reduce heat; cover and cook 20 minutes, stirring occasionally.
Makes 8 servings.
