Untie roast and trim off fat.

Re-tie roast.

Rub garlic over surface.

Combine rosemary, chives and parsley.

Sprinkle evenly. Cover and chill 2 to 4 hours.

Place roast on a rack of broiler pan coated with vegetable cooking spray.

Insert meat thermometer into thickest part of roast.

Place roast in a 450° oven.

Reduce heat to 325° and bake 2 hours or until meat thermometer registers 160°.

Let roast stand 10 minutes.

Remove string and slice diagonally across grain.
