Lobster Newburg
Lobster Newburg is an easy dinner. Made with 1 lb. sealegs, 1/4 c. butter/margarine, 1/2 c. sherry, 1/2 c. heavy cream or light cream and 2 egg yolks, lightly beaten, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Melt butter in skillet. Add sealegs and poach gently for 3 to 4 minutes.
Add sherry; gently simmer.
Add cream, except for 2 tablespoons; simmer. Add 2 tablespoons of cream to beaten egg yolks and mix into hot sauce.
Simmer 2 to 3 minutes or until sauce thickens.
Spoon over hot rice.
