Light 'n' Lean Meat Loaf
Light 'N' Lean Meat Loaf is an impressive dinner. Made with 1 1/2 c. diced carrots, 1 1/2 c. diced onions, 1 c. diced sweet pepper, 12 oz. lean ground beef and 1 lb. ground turkey, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Coat a large nonstick frying pan with vegetable cooking spray. Add the carrots, onions and pepper.
Saute for 5 to 10 minutes. Crumble the ground beef and turkey into a large bowl.
Lightly toss with the cooked vegetables, oats and rice.
In a small bowl, combine the tomato juice, eggs, oregano, thyme, pepper sauce and black pepper.
Add to the meat mix.
