Lemony Catfish In Foil is an moderately easy dinner. Made with 1 lb. catfish fillets, 4 tsp. margarine, 1/3 c. lemon juice, 1/4 to 1/2 tsp. pepper and 1/2 c. carrots, diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Place catfish on piece of foil about 4 inches longer than fish.
Melt margarine and add the lemon juice, pepper, carrots, celery, onion and parsley.
Pour mixture over fish dividing evenly.

Bring edges of foil together and fold over several times.
Twist on the end to form a tail. Tuck other end under to form a point.
Place on cookie sheet. Bake at 350Β° for 30 minutes or until fish flakes easily.
