Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1/4 c. cornstarch, 2 tbsp. flour, 1 1/3 c.sugar, 1/4 tsp. salt and 1 1/2 c. boiling water, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix cornstarch, sugar and salt into pot double boiler.
Add boiling water; blend and cook, stirring constantly until thick. Beat egg yolks and stir into mixture.
Cook 2 more minutes. Remove from heat.
Add lemon juice, butter and rind from lemon. Mix well and cool.
Beat egg whites until stiff, adding 6 tablespoons sugar gradually.
Swirl over pie filling and bake in moderate oven at 350Β° for 12 to 15 minutes until golden brown.
