Leg Of Lamb is an moderately easy dinner. Made with 1 leg of lamb (semi-boneless is best), 8 to 10 potatoes, cut in quarters, 8 to 10 onions, cut in quarters, 1 can beef broth and 1 head garlic, fresh, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 500°.

Cut up, lengthwise, 6 to 8 cloves of fresh garlic.

Pierce lamb and insert pieces of garlic.

Sprinkle salt and pepper on lamb generously.

Sprinkle rosemary on lamb. Place in large roasting pan, pour can of beef broth into the pan. Add all the potatoes and onions around roast.

Put pan into 500° oven and immediately turn down oven to 325°.

Bake about 30 minutes per pound.

Occasionally baste and turn potatoes and onions. Serve with the mint jelly on the side.
