Katie Schaffer's Corn Bread
Katie Schaffer'S Corn Bread is an moderately easy dinner. Made with 1 1/4 c. all-purpose flour, 3/4 c. corn meal, 1/4 c. sugar, 2 tsp. baking powder and 1/2 tsp. salt (optional), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat oven to 400Β°.
Grease 8 or 9-inch baking pan.
Combine dry ingredients.
Stir in milk, oil and egg, mixing just until dry ingredients are moistened.
Pour batter into prepared pan.
Bake 20 to 25 minutes or until light golden brown and wooden pick inserted near center comes out clear.
To make this taste more like Grandma Schaffer's, bake in a preheated cast-iron skillet. Grandma made her corn bread on top of the stove using a preheated omelet pan (low flame 10 minutes each side).
Serve warm with sorghum for a down home treat in the morning.
