Jan's Lemon Pie
Jan'S Lemon Pie is an moderately easy dinner. Made with 1 c. sugar, 1/8 tsp. salt, 1/3 c. flour, 1 1/2 c. water and 3 eggs, separated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Grate fresh lemon rind to make 2 teaspoons, then squeeze and set aside.
Separate eggs, reserve whites for meringue.
Mix together sugar, salt, flour and lemon rind.
Add water.
Stir until smooth.
Cook over medium heat until mixture starts to thicken.
After slightly beating egg yolks.
Put about 3 tablespoons of hot mixture in and mix.
Add rest of egg yolk mixture and lemon juice to hot mixture and stir until it comes to a boil.
Add butter and cool slightly.
Pour into baked pie shell and top with meringue (seal all edges around pie).
