Jambalaya
Jambalaya is an moderately easy dinner. Made with 2 lb. meat*, 2 to 3 c. chopped onions, garlic, bell peppers and/or celery (any combination), 2 bay leaves, pinch of thyme and dash cayenne pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook meat in large iron pot.
Remove and drain all but 2 tablespoons of grease.
Add chopped onions, bell pepper, garlic and celery.
Cook until soft.
Add spices, tomatoes, rice and beer. Add meat and then enough water to cover rice, about 1-inch.
Bring to a boil.
Reduce heat to low and cover.
Cook until rice is done, about 30 to 40 minutes.
