Italian Wedding Soup
Italian Wedding Soup is an moderately easy dinner. Made with whole or chicken parts, celery, onions, carrots and escarole, spinach or any leafy vegetable (one), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cook chicken until well done in plenty of broth.
With your chopped veggies to make your stock, remove chicken and remove skin and bones.
Make a couple of dozen meat balls (or more).
Roll them real small.

Salt and pepper to taste.
Cook long enough for pasta and meat balls to be cooked.
Serve, putting one or two meat balls in each bowl.
