Irish Bread
Irish Bread is an moderately easy dinner. Made with 2 1/2 c. flour, 2 tsp. baking powder, 1/2 tsp. salt, 1/2 tsp. baking soda and 1/4 c. butter or margarine, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Preheat oven to 375°.
Sift together flour, baking powder, salt and baking soda in large bowl; set aside.
Cream butter and sugar. Add beaten egg; blend.
Add buttermilk; blend well.
Add liquid mixture to dry ingredients and mix (by hand) together until dry ingredients are well moistened.
Add caraway seeds and mix.
Fold in raisins until completely dispersed into mixture.
Grease 1 1/2-quart glass casserole or 1 loaf bread tin.
Pour in mixture. Brush top with melted butter or margarine.
Sprinkle with a little sugar.
Bake at 375° for 30 minutes, then reduce heat to 325° and bake about another 30 minutes.
Test middle of bread with toothpick to make sure it's fully cooked.
