Homemade Vanilla Cream Pie
Homemade Vanilla Cream Pie is an moderately easy dinner. Made with 3/4 c. sugar, 1/3 c. all-purpose flour or 3 tbsp. cornstarch, 1/4 tsp. salt, 2 c. milk and 3 slightly beaten egg yolks, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine sugar, flour and salt in saucepan.
Gradually stir in milk and cook over medium heat until bubbly, stirring constantly. Cook and stir 2 minutes and then remove from heat.
Stir small amount hot mixture into egg yolks and return to saucepan. Continue to cook and stir 2 minutes.
Remove from heat; add butter and vanilla.
Sprinkle flaked coconut over bottom of pastry shell. Add 1 cup of coconut to cooked mixture and pour into cooled pastry shell.
Spread meringue atop pie.
Top with remaining coconut (approximately 1/3 cup) and bake at 350Β° for 12 to 15 minutes.
Cool and serve.
You may substitute whipped topping for meringue but do not bake.
