👨‍🍳 Instructions

Combine sugar, soda, buttermilk and salt in a heavy 3-quart saucepan.

Cook for about 5 minutes over high heat or to 210° on a candy thermometer.

Stir often, scraping the bottom of the pan well.

The mixture will foam up.

Add butter or oleo and pecans. Continue cooking over medium heat.

Stir constantly, scraping sides and bottom of pan until candy reaches softball stage (234°). Remove from heat.

Cool slightly, about 2 minutes.

Beat with spoon until thick and creamy.

Drop by tablespoon onto a sheet of waxed paper or aluminum foil.

Cool completely before serving.
