"Heart Smart" Spinach Stuffed Shells
"Heart Smart" Spinach Stuffed Shells is an moderately easy dinner. Made with 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained, 4 oz. part skim ricotta cheese (1/2 c.), 2 oz. part skim mozzarella cheese (1/2 c.), 1 egg, lightly beaten and 1 tbsp. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix spinach, Ricotta, Mozzarella and Parmesan cheeses, egg, nutmeg and pepper; set aside.
Cook shells as directed, omitting salt.
Drain.
Preheat oven to 350Β°.
Fill each shell with about 1 tablespoon of spinach mixture.
In bottom of 9-inch square baking dish, spoon 1/2 cup of sauce.
Place shells in single layer over sauce.
Pour remaining sauce over shells.
Bake 20 to 30 minutes until heated through and bubbly.
