Hawaiian Pie
Hawaiian Pie is an moderately easy dinner. Made with 1/2 c. sifted flour (self-rising), 1/4 tsp. salt, 3 egg yolks, slightly beaten, 1 1/2 c. crushed pineapple, drained and 1 c. shredded coconut, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine flour, sugar and salt.
Add to the scalded milk, gradually, in a double boiler; cook unti thick, stirring constantly.
Pour small amount of mixture over egg yolks.
Return to boiler and cook 3 to 4 minutes longer.
Add butter and a little lemon juice, pineapple and coconut.
Pour into pie shell and top with meringue.
For meringue, fold 6 tablespoons sugar into egg whites.
Bake at 350Β° for 12 to 15 minutes.
