Green Tomato Fish Pickles
Green Tomato Fish Pickles is an moderately easy dinner you can prepare in about 1 hour 36 minutes. Made with qt. green tomatoes, cut in quarters or eighths, depending on size, c. bell pepper, chopped, qt. onions, chopped, hot pepper, minced and c. salt (canning salt), this recipe delivers authentic, satisfying flavors. Sprinkle salt over the tomatoes, pepper, onions and hot pepper.
Let stand overnight.
Drain off liquid.
Squeeze out all the liquid so it won't be too salty.
Mix sugar, mustard seed and vinegar.
Heat until sugar dissolves.
Then add vegetable mixture. Heat until vegetables change color.
Stir and let boil about 5 minutes.
Put in jars and seal.
I put the filled and sealed jars in hot water bath for 8 to 10 minutes.
