Green Pepper Relish (Jelly)
Green Pepper Relish (Jelly) is an moderately easy dinner. Made with 3 c. chopped green peppers, 1/4 c. chopped red peppers (hot), 3 c. vinegar, 5 lb. sugar and 2 bottles certo, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a blender or food processor, chop one cup green peppers, a little red pepper and 1 cup vinegar.
Repeat this until the first three ingredients are blended well.
Add this mixture to the sugar and bring it to a fast boil.
(Watch closely because it boils over quickly.)
Boil for 3 minutes.
Add Certo and enough green food coloring to make a dark green (about the color of green pepper). Boil 1 minute more and seal in sterilized jars.
Serve over cream cheese, spread on Wheat Thins or favorite crackers.
Makes 12 1/2 pints (I got 7 pints).
