Soak garlic in olive oil for at least 1 hour.

Scrub potatoes; cut lengthwise into 8 wedges each.

Place wedges in a bowl and cover with very cold water.

Allow to stand for 30 minutes.

Drain and pat dry with paper towels.

Toss wedges in oil until coated.
