Greek Beef Stew
Greek Beef Stew is an moderately easy dinner. Made with 1 1/2 lb. lean beef in 1-inch cubes, 3/4 c. tomato paste, 8 small onions, 2 carrots and 2 potatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown the beef cubes on all sides in a skillet in 1/4 cup butter.
Transfer the meat to a casserole.
In the skillet, saute the onions until golden.
Transfer the onions to the casserole.
To the skillet add the tomato paste and water.
Bring the sauce to a boil and pour it over the meat and onions.
Cover the casserole and simmer the stew in a 350° oven for 1 1/2 hours.
Add the carrots and potatoes, cinnamon, basil, salt and pepper.
Cover the casserole and cook for 30 to 35 minutes longer at 350°, until meat and vegetables are tender.
Serves 4.
