Grantham Gingerbreads
Grantham Gingerbreads is an easy dinner. Made with 4 oz. margarine or butter, 12 oz. castor sugar (very fine granulated sugar), 1 egg, beaten, 9 oz. self-rising flour and 1 level tsp. ginger, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Whisk butter and sugar together in a bowl until pale and fluffy.
Gradually beating the egg, sift the flour and ginger into the mixture and work in with a fork until fairly firm dough is obtained.
Roll dough into small balls, about size of walnut, and put them on buttered baking sheets, spaced apart.
Bake in the oven at 150° Centigrade, 300° Fahrenheit or gas mark 2 for 40 to 45 minutes, until crisp, well risen, hollow and very lightly browned.
