Granny's Potato Salad
Granny'S Potato Salad is an moderately easy dinner. Made with 6 to 8 potatoes, 3 stalks celery, 1 to 2 tbsp. celery seeds, 1 large onion and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Peel and cut up potatoes first.
Boil slowly until soft in salted water 20 to 30 minutes.
Chop up onion and place in the bottom of a bowl.
Drain most of the water off the potatoes, but leave about 1/2 cup worth.
Pour HOT potatoes and water on top of onion and let sit a couple hours.
The heat will take the bitterness out of the onions.
Pour off all the water.
Add chopped celery and the rest.
