German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 3 1/2 lb. medium potatoes, 1 c. chopped onion, 1/2 lb. bacon, sliced and diced, 2 tbsp. margarine and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook potatoes, covered, in salted boiling water to cover for 35 to 40 minutes, or until fork-tender.
Peel warm potatoes; slice.
Add onion.
In large skillet, cook bacon; remove from heat.
Lift out with slotted spoon; set aside.
Pour off fat. Return 1/4 cup fat to skillet.
Stir flour into fat in skillet. Add sugar, butter, salt, pepper, vinegar and 1 cup water.
Bring to boil, stirring.
Remove from heat.
Add sour cream.
Add potatoes, onion and half of bacon; toss gently.
Sprinkle with rest of bacon and chopped parsley.
Serve warm.
