Fried Octopus(Octopus Fritti)
Fried Octopus(Octopus Fritti) is an easy dinner. Made with 3 lb. small octopus, 1 c. flour, 1/4 tsp. pepper and olive oil for frying, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Octopus soaking in salt water and pounding octopus against side of bowl.
This helps remove any sand that may be trapped suction cups.
Cut off head and only use tentacles. and drain again.
Cut with scissors, keeping tentacles together.
Drain octopus in colander and place bowl with pepper.
Heat oil in large skillet and dip octopus in flour and then into oil.
Fry on medium-high heat, cooking about 8 minutes on each side.
Brown well, but be careful not to burn.
To serve, place on warm platter with lemon wedges, if desired.
Keep warm in oven until all frying is complete.
Makes 5 to 6 servings.
