French Green Split Pea Soup is an easy dinner. Made with leftover ham (bone and all liquid from boiled ham dinner), 1 lb. green split peas, 1 medium onion, cubed, 5 to 6 potatoes, cubed and 5 carrots, cubed, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Remove ham and bone from ham liquid.
Skim fat from ham liquid when
Heat liquid (approximately 3 1/2 quarts) and add green split peas.
Bring to a boil, then simmer.
Add the vegetables and simmer approximately 3 hours.
Remove ham from bone; and add to soup.
Makes about 3 1/2 quarts. Consistency should be thick like stew.
