Fish Chowder
Fish Chowder is an moderately easy dinner. Made with 2 lb. haddock, 2 oz. diced salt pork, 2 onions, sliced, 4 large potatoes, diced and 1 c. chopped celery, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Simmer haddock in 2 cups of water for 15 minutes; drain. Reserve broth.
Remove bones from fish.
Saute diced salt pork until crisp.
Remove pork; reserve fat and saute onions until brown.
Add fish, potatoes, celery, bay leaf, salt and pepper. Pour in fish broth which was reserved and enough water to make 3 cups of liquid.
Simmer for 30 minutes.
