Escarole thoroughly several changes of cold water. Discard bruised or tough leaves and drain well. Heat oil in large skillet and add garlic.
Saute for 1 minute on medium heat.
Brown garlic.
Add cleaned escarole and the rest of the ingredients.
Saute on medium heat for 8 to 10 minutes. Serve immediately.
