Enchilada Casserole
Enchilada Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 1 c. chopped onions, 1 clove garlic, minced, 1 (14 1/2 oz.) can tomatoes, undrained and crushed and 1 (4 oz.) can diced green chilies or 1 small green pepper, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown meat with onions and garlic until vegetables are tender. Stir in next 5 ingredients.
Bring to a boil, then simmer 10 minutes. Stir occasionally. In a 2-quart casserole, layer 1/2 meat, 1 cup cheese and 1 cup chips.
Top with last 1/2 meat and chips. Bake at 350Β° for 30 minutes. Top with remaining cheese and bake 5 minutes more.
Makes 4 servings.
