Eggs in Spanish Sauce
Eggs In Spanish Sauce is an moderately easy dinner. Made with 6 hard-cooked eggs, 1/4 c. mayonnaise, 1 tsp. prepared mustard, 1/2 c. chopped onion and 1/4 c. chopped green pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Halve eggs lengthwise.
Remove yolks and mash; stir in mayonnaise, mustard and 1/8 teaspoon salt.
Stuff egg whites with yolk mixture.
Arrange egg halves in a 10 x 6 x 2-inch baking dish.
Cook onion and green pepper in 2 tablespoons of butter until tender.
Stir in flour, sugar, 1/2 teaspoon of salt and dash of pepper.
Add undrained tomatoes and bay leaf.
Cook and stir until bubbly.
Cook and stir for 2 minutes more.
Remove bay leaf and pour over eggs.
Toss together crumbs and melted butter; sprinkle atop.
Bake in a 350Β° oven for about 25 minutes.
Let stand for 5 to 10 minutes.
