Eggplant Pie
Eggplant Pie is an moderately easy dinner. Made with 1 medium eggplant, peeled and cut lengthwise into 1/4-inch thick slices, 2 tbsp. olive oil, 1/2 c. chopped tomatoes, 1/2 c. chopped green peppers and 1/2 c. chopped onions, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute tomatoes, peppers, onions and mushrooms in a little oil. Broil eggplant slices.
Brush with the 2 tablespoons olive oil, 5 minutes to a side.
Arrange in a 9-inch pie plate overlapping slices to form a crust.
Combine vegetables and place on top. Sprinkle with oregano and garlic powder.
Combine cheeses. Sprinkle on top.
Place Parmesan on top of that.
Bake until cheese is melted at 350Β° for 25 minutes.
