Eggplant Parmesan
Eggplant Parmesan is an moderately easy dinner. Made with 1 medium size eggplant, 2 eggs, 1 pkg. mozzarella cheese, cracker meal or bread crumbs and 1 c. vegetable oil, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Pare and slice eggplant 1/2-inch thick.
Dip each slice in well beaten eggs. Coat with very fine cracker meal or bread crumbs.
Place oil in frying pan to moderate heat.
Place eggplant slices, brown on both sides.
In baking dish, place eggplant. Cover with Mozzarella cheese and cover with sauce.
Bake at 350° to 375° for about 30 minutes.
