Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 2 lb. eggplant or 6 small ones, peeled and sliced, 1 lg. onion, chopped, 1 tbsp. butter, 1 egg, beaten and 1/2 lb. sharp cheddar cheese, grated, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil eggplant in salted water, drain.
Saute onions in butter.
Add eggplant, egg, and cheese. Cook a little more, until cheese is melted.
Add a little bread crumbs, then add seasoned bread crumbs on top, then dot with butter.
Bake at 350Β° in a pan for 45 minutes.
