Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 2 c. cooked rice, 1 medium eggplant, 1 lb. ground chuck, 1/2 c. chopped onion and 3/4 c. chopped bell pepper, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Peel eggplant; cut in cubes and boil in salted water until tender, approximately 20 minutes.
Drain and mash with fork. Brown ground chuck, onion and bell pepper; stir in eggplant and 2 cups cooked rice.
Pour into 2-quart baking dish.
Top with buttered cracker crumbs (I prefer Ritz).
Bake at 375Β° for 20 minutes.
