Eggplant Casserole
Eggplant Casserole is an easy dinner. Made with 1 eggplant, 1 (1 lb.) can tomatoes, diced, 1 medium onion, chopped, shredded cheddar cheese (about 1/2 c.) and salt and pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Peel and boil eggplant in salted water for 5 to 10 minutes. Mash.
Add salt and pepper to taste, tomatoes, chopped onion and shredded cheese.
(Reserve enough to sprinkle on top.)
Stir and put in greased casserole dish.
Bake about 30 minutes in 350Β° oven.
Top with reserved cheese and heat to melt.
