Dutch Apple Fritters

Combine egg yolks, beer, oil, 1 1/4 cups flour, sugar and salt in container of blender.
Whirl on high for 1 minute.
Cover and let batter rest at room temperature for 2 hours or refrigerate overnight.
Pare and core the apples and cut into 1/2-inch thick rings.
Pour oil into a deep skillet to a 2-inch depth.
Heat oil to 375°.
Beat egg whites until stiff; fold into the batter.
Mix remaining flour and cinnamon in a shaker bag.
Shake rings to coat well.
Dip rings into the batter coating evenly.
Fry rings 3 to 4 minutes or until golden, browning on both sides.
Keep warm in a 250° oven.
Serve hot sprinkled with confectioners sugar and cinnamon.
