Dolmas (Greek Appetizer)
Dolmas (Greek Appetizer) is an impressive dinner. Made with 1/2 c. pine nuts, 1 c. long grain white rice, 1 c. plus 3 tbsp. olive oil, 1 c. finely chopped yellow onion and 3 finely chopped green onions with tops, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Toast pine nuts in a heavy skillet over medium heat, stirring frequently, for about 5 minutes until golden.
Wash rice in cold water and drain.
Heat 3 tablespoons of olive oil in a saute pan over medium-high heat.
Add yellow onion and saute until just soft.
Transfer to a large bowl.
Add rice, 1/2 cup of olive oil, green onions, 1/4 cup parsley, mint, pine nuts, cinnamon, allspice, salt and pepper.
