Cucumber Salad
Cucumber Salad is an easy dinner. Made with 2 or 3 fresh young cucumbers, sliced very thin, salt, 1 tbsp. each olive oil and vinegar, pepper to taste and pinch of sugar (optional), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a bowl, arrange the sliced cucumbers, salting them in layers.
Cover with a saucer and weight down with something heavy. Let stand for several hours, or until juices run out.
Pour off the cucumber juice, which will take care of most of the salt. Combine all other ingredients and add to the cucumbers.
Mix and chill.
Makes 4 to 6 servings.
