Cucumber Pickle
Cucumber Pickle is an easy dinner. Made with 10 medium cucumbers, washed (good and free of spots), 8 c. sugar, 5 tbsp. salt, 4 c. vinegar and 2 tbsp. pickling spices (optional), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Put cucumbers in stone jar.
Cover with boiling water and let stand until next morning.
Drain well.
Cover with boiling water. Repeat for 3 days.
On the fifth day, drain and dry well the cucumbers.
Slice in 1/2-inch pieces.
Combine sugar, salt and vinegar.
Add spices if desired (I don't use spices).
Bring to a boil and pour over cucumbers.
Let stand 2 days.
On third day, bring to a boil. Can and seal.
Boiling water bath is recommended. These are very good and brickel. If you have any left over, they do not turn soft.
