Creole-Style Fish is an moderately easy dinner. Made with 1 large green pepper, sliced thin, 1 1/2 c. sliced green onions, 1 (14 1/2 oz.) can tomatoes, 1 (8 oz.) can tomato sauce and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Cook green onions and green pepper in skillet until tender. Stir in tomatoes, tomato sauce, salt, pepper, thyme and bay leaf. Simmer gently for 15 minutes.

Remove bay leaf.

Arrange fish in a shallow baking pan. (Pan should be coated with cooking spray.) Spoon sauce over fillets.

Bake at 375Β° for 15 minutes or until fish flakes easily with a fork.

Serve with rice.
