Creamy Corn Raita
Creamy Corn Raita is an moderately easy dinner. Made with 2 c. cooked fresh or frozen whole kernel corn, drained and cooled, 1/2 c. low-fat or non-fat plain yogurt, 2 tbsp. sour cream, 1/4 tsp. salt and 1 1/2 tsp. cooking oil, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine in a medium bowl, cooled corn, yogurt, sour cream and salt.
In a small saucepan, combine oil, cumin seed, mustard seed and chili pepper.
Cook 5 minutes over low heat (do not overheat). Stir both mixtures together.
Serve immediately or cover and chill up to 4 hours.
Serve on lettuce leaves.
Sprinkle with chopped peppers, if desired.
