Cranberry Salad
Cranberry Salad is an moderately easy dinner. Made with 1 lb. fresh cranberries, 2 c. sugar, 1/4 tsp. salt, 1 tbsp. lemon juice and 2 (3 oz.) pkg. cherry flavored gelatin, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Grind cranberries in food chopper or blender.
Place sugar, salt and lemon juice over cranberries.
Let stand for 2 hours.
Mix gelatin with boiling water.
Add cold water and stir until dissolved.
When gelatin is syrupy, add cranberry mixture, celery, nuts and pineapple.
Place in refrigerator until firm.
Place in refrigerator to store.
This salad can also be frozen.
Yields 12 to 16 servings.
