Melt butter; add flour, cornstarch and salt.
Stir until well blended.
While on heat, pour consomme in gradually until it comes to boil.
Add milk gradually.
Bring to boiling point.
Add slightly beaten egg yolks.
Butter 8 shells or baking dish.
Cover bottom with fish.
Cover with sauce and sprinkle with cheese.
Put dish or shells in pan under broiler to brown.
