Country Peanut Brittle
Country Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1 c. light corn syrup, 1/2 c. water, 1/4 c. butter or margarine and 2 1/2 c. raw peanuts, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Butter 2 large baking sheets; set aside.
Butter the sides of a heavy 3 quart saucepan.
In the saucepan combine sugar, corn syrup, water and the 1/4 cup butter or margarine. Cook over medium-high to boiling, stirring constantly with a wooden spoon to dissolve sugar.
This should take about 5 minutes.
Avoid splashing mixture on sides of pan. Carefully candy thermometer to side of pan.
Cook over medium-low stirring occasionally, until thermometer registers 275Β°, crack stage.
Mixture should boil at a moderate, steady over entire surface.
Reaching soft crack stage should take 30 to 35 minutes.
