Combine last 6 ingredients and then add saltpeter mixture.
Put meat in container (crock or slow cooker).
Pour marinade over meat. Weight down with plate.
Leave for 3 weeks.
Turn occasionally.
If meat is bloody, rinse and then cook as a regular roast.
Serve warm or cold.
