Cool Cucumber Soup
Cool Cucumber Soup is an moderately easy dinner. Made with 2 c. chicken broth or 2 bouillon cubes, dissolved in 2 c. water, 2 to 4 organic cucumbers, peeled, seeded and cut into strips, 1 tbsp. fresh organic onion, chopped, salt and freshly ground pepper to taste and 2 c. organic sour cream or yogurt, this recipe delivers authentic, satisfying flavors. Combine broth, cucumbers and onion in a medium saucepan over low heat.
Cook until cucumbers are just tender.
Transfer to blender and blend with salt and pepper.
When mixture is cool, combine with sour cream and yogurt.
Serve in chilled cups or bowls and sprinkle with chopped cucumber and dill.
