Chocolate Truffle Cake
Chocolate Truffle Cake is an moderately easy dinner. Made with 8 eggs, separated, 8 oz. bittersweet chocolate, 1 c. sugar, 1 c. butter and 1 tsp. vanilla extract, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 375°.
All ingredients should be at room temperature.
Place chocolate in a food processor and process with the sharp blade until chocolate is like coarse meal.
Add egg yolks, butter, sugar and extract and process until smooth.
In a large mixing bowl, combine egg whites, water and salt and beat until very stiff.
Fold chocolate mixture into egg whites and pour batter into a greased and lined 9-inch spring-form pan.
Bake for 20 minutes at 375°, then reduce heat to 350° and bake for 50 minutes.
Cool cake on a cake rack.
