Chili Verde
Chili Verde is an moderately easy dinner. Made with 3 tbsp. bacon fat or vegetable oil, 1 c. coarsely chopped onions, 2 lb. lean pork, cut into 1/2 inch cubes, 2 tbsp. flour and 1/2 tsp. ground cumin, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

In large pot heat bacon fat; saute onions until soft.
Add pork cubes.
Cook for 5 minutes.
Sprinkle flour over pork and onions, cook until the pork is browned and onions are golden.
Stir in the cumin, garlic and chilies, mixing well.
Add the chicken stock and stir.
Add salt and pepper.
Lower heat and simmer, uncovered, until meat is tender (about 1 1/2 to 2 hours).
Serve with warm tortillas.
