Chile Verde Con Carne
Chile Verde Con Carne is an moderately easy dinner. Made with 2 lb. stew meat, 1 large onion, sliced in rings, 2 tbsp. bacon fat or oil, 2 (1 lb.) cans tomatoes and 1 (7 oz.) can ortega chiles, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Flour and brown the meat in the grease in a Dutch oven.
In a separate pan, saute onion.
Add this to the meat, together with the tomatoes, chiles, salt, oregano, cumin and beef broth.
Cook, covered, at 325Β° for about 4 hours.
If consistency is too thin, thicken with flour, stirred in water.
Serve with warm flour tortillas.
