Chile Rellenos Casserole
Chile Rellenos Casserole is an moderately easy dinner. Made with 4 oz. jack cheese, cut in strips, 1 can whole ortega green chilies, 4 eggs, 1/3 c. milk and 1/2 c. flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cut green chilies in half.
Divide Jack cheese strips evenly among chile strips arranged in bottom of greased shallow pan. Beat eggs until thick and foamy, add milk, flour and baking powder, beat until as smooth as possible.
Pour batter over chilies and cheese strips, sprinkle with sharp Cheddar and bake, uncovered, at 375Β° for about 30 minutes or until set.
Garnish with mild salsa over top and sliced olives, if desired.
Yields 4 to 6 servings.
