Chicken With Lemon-Wine Sauce is an moderately easy dinner. Made with 1 1/4 lb. boneless, skinless chicken breast, salt and pepper, 1/4 c. all-purpose flour, 2 tbsp. butter or margarine and 1/2 c. dry white wine or chicken broth, this recipe delivers authentic, satisfying flavors. Between waxed paper, pound chicken 1/4 inch thick; season. Coat with flour.
In skillet in 2 teaspoons hot butter or margarine, cook chicken until lightly browned, about 2 to 3 minutes per side.
Remove and keep warm.
Repeat with remaining chicken and butter/margarine as needed.
In cup, stir wine and lemon juice; add to pan drippings in skillet.
Cook and stir until slightly thickened.
Pour over chicken pieces.
Sprinkle with parsley. Garnish with capers or lemon slices, if desired.
